Easiest asparagus in the oven

Baked asparagus

This is a quick and easy to prepare side dish, where you bake the asparagus in the oven (rather than steam it, as in this recipe).  The trick is to use garlic and to let the asparagus bake until it’s a bit crunchy (when it darkens and looks wrinkled, it’s ready!).

Tonight’s dinner: nachos with home made salsa

20121105-174856.jpgIt’s been really difficult to update the blog lately. Way too much work, no time to sit down and write. Such is life… But tonight’s different and we’re having nachos with home made salsa and sour cream.

There’s not much to share, really. You need some really good tortilla chips – I like the organic (i.e, expensive…) ones from the organic aisle in Superstore. You’ll also need Mozzarella cheese – I buy the cheap, no name bar from Superstore. You’ll need sour cream, and the ingredients for the salsa: tomatoes, bell pepper, avocado, green onion, salt, pepper, fresh or dried cilantro, lemon.

Roasted beets, potatoes and red pepper

Oven-ready veggies.

Another easy to make side dish: peel, cut, throw into the oven and eat. It takes 10 minutes to prepare the veggies and around 45 minutes to bake in the oven. You can add pretty much whatever veggies are in season and you can play with the herbs. For extra flavor, add Feta cheese (here’s another version of this recipe).

Zucchini Pizza

When my friend sent me this recipe for a vegetarian zucchini pizza, I was skeptical.  One bite later, I was a fan! It’s hard to believe that the combination of zucchini, garlic, onion and cashew-based sauce (no mayo, no cheese, no ketchup!) can be so tasty!

Avocado and Cherry Tomatoes Salad

Ingredients for Avocado and Cherry Tomatoes Salad

If you’re looking for an easy, healthy and vegetarian salad, this one meets all three criteria. If you’re lucky, you can get the avocado for 50 – 90 cents at Superstore, making it for a very cheap salad too! The secret is the vinaigrette: always get a good quality balsamic vinegar (I recommend the ones from Lina’s Market). And always mix the vinaigrette in advance, letting it rest for at least 5 – 10 minutes before using it.

Another Quiche

I made another quiche, but there’s a trick to it: I used Saba to cook the veggies. And it was simply delicious. I find quiches quick to prepare if you have some frozen dough. Saba is a syrup from grapes that is thick and sweet; it works really well with the veggies I used for this quiche (onion, mushrooms and bell peppers).

Dinner with Roots and Fish

I had a very tasty dinner last night, so I thought I’d share: a salad made of various veggie, tofu and pickled herring. The three went so well together that I became a fan. I got the organic tofu (firm) and the pickled herring from Superstore. For the salad, you will need: 1 medium beetroot, 2 carrots, 2 small apples, 1 celery root, salt, pepper, raisins and 1 Tbsp sour cream.
