Potatoes, carrots and eggs

Whenever I have an upset stomach, I make this dish. It’s easy to make, as all ingredients are boiled and then tossed together.

Sandwiches for dinner

I dread dinners. We usually have a salad in the evening, but I get bored with them after a few evenings. The other day, I had this fantastic idea of making a sandwich with chicken leftovers from a roasted chicken and fresh veggies. We had them for dinner for three or four evenings in the row, until I got bored. Again. But they’re still tasty!

Beets and horseradish salad

Nothing compares to the sweet taste of beets flavoured by the tanginess of horseradish. Sprinkle some salty, creamy feta cheese, and there you go, a work of art!

Baked garlic potatoes

20130419-171927.jpg

Ever since my friend first introduced me to this recipe, I cannot get enough of these potatoes! It takes around 10-15 minutes to prepare them and they’re ready in 30-45 minutes.

Quinoa soufflé

Quinoa gratin with chicken – my lunch.

I am trying to warm up to quinoa (with little success, so far). I got this recipe from the President’s Choice mobile app and used a bit less cheese than recommended. The recipe is fairly simple, and since the link is above, I won’t summarize it here. Suffice it to say you need quinoa, leeks, bell peppers, eggs and some cheese.

Easiest asparagus in the oven

Baked asparagus

This is a quick and easy to prepare side dish, where you bake the asparagus in the oven (rather than steam it, as in this recipe).  The trick is to use garlic and to let the asparagus bake until it’s a bit crunchy (when it darkens and looks wrinkled, it’s ready!).

Tonight’s dinner: nachos with home made salsa

20121105-174856.jpgIt’s been really difficult to update the blog lately. Way too much work, no time to sit down and write. Such is life… But tonight’s different and we’re having nachos with home made salsa and sour cream.

There’s not much to share, really. You need some really good tortilla chips – I like the organic (i.e, expensive…) ones from the organic aisle in Superstore. You’ll also need Mozzarella cheese – I buy the cheap, no name bar from Superstore. You’ll need sour cream, and the ingredients for the salsa: tomatoes, bell pepper, avocado, green onion, salt, pepper, fresh or dried cilantro, lemon.

Roasted beets, potatoes and red pepper

Oven-ready veggies.

Another easy to make side dish: peel, cut, throw into the oven and eat. It takes 10 minutes to prepare the veggies and around 45 minutes to bake in the oven. You can add pretty much whatever veggies are in season and you can play with the herbs. For extra flavor, add Feta cheese (here’s another version of this recipe).

Quinoa salad – President’s Choice recipe

20120812-175806.jpg

Quinoa salad.

I am not a big fan of quinoa, but I give it a try every now and then. It’s relatively easy to make and I like the cumin scented veggies. President’s Choice quinoa boxes come with the full recipe – worth giving it a try when you feel like eating healthy (and you ran out of ideas). I am not going to reproduce the recipe here since it’s photographed below.
