Nothing compares to the sweet taste of beets flavoured by the tanginess of horseradish. Sprinkle some salty, creamy feta cheese, and there you go, a work of art!
This is a perfect salad to accompany a main dish – fish, steak, chicken, you name it! I boiled the beets (this way, peeling them becomes a breeze) in advance, and kept them in the fridge for a few days (read: forgot about them completely…).
- 2 cooked small beets, peeled and sliced
- 1-2 tsp of horseradish paste
- 2-3 Tbsp creamy feta cheese
These quantities are for a small bowl. You can certainly use more beets and then adjust the cheese and horseradish to your taste!
- Place in a bowl, sprinkle the cheese, top with the horseradish and eat!
