Quinoa soufflé


Quinoa gratin with chicken – my lunch.


I am trying to warm up to quinoa (with little success, so far). I got this recipe from the President’s Choice mobile app and used a bit less cheese than recommended. The recipe is fairly simple, and since the link is above, I won’t summarize it here. Suffice it to say you need quinoa, leeks, bell peppers, eggs and some cheese.

Other than using perhaps half of the recommended quantity of cheese, I closely followed the recipe instructions. The end result was a bit more watery and definitely more bland than I had expected. It was not bad, but it was not great either. We had it for lunch for two days, then into the garbage it went.

If anyone knows of a better quinoa recipe, please share a link! I’d really like to like this grain!
