Baked mackerel


Oven-ready mackerel

Frozen mackerel pack from Superstore – around $9 + Simple recipe = great lunch/ dinner! While traveling, I had the chance to eat this really great grilled mackerel. It was so simple, yet so delicious, that I was determined to replicate it at home. Alas, I can’t BBQ – but if you do have a BBQ, try it grilled.


  • Mackerel (as many as you’re going to eat).
  • Olive oil.
  • 1 lemon.
  • Salt and pepper.
  • Parsley.


If you buy the frozen mackerel from Superstore, be warned: you have to remove the guts yourself. It’s not as disgusting as it sounds – defrost the mackerel over night. In the sink, cut it on the side, along the belly. Using your hand (be brave!), remove the guts and rinse generously. Voila, your fish is cleaned and ready to go!

  1. Prepare the marinade (always prepare it in a bowl and mix well): olive oil, salt, pepper, parsley (I used dried parsley) and the juice from the lemon. Keep some lemon slices for decoration.
  2. Place the mackerel in an oven pan and spoon the marinade over (put some inside the belly). Place lemon slices on top.
  3. Cover with foil and bake in the oven (350F) for around 20 minutes. Remove foil and bake for a few more minutes, until fish is golden.

Remember that this fish has quite a few bones (though, in my opinion, not as many as the trout).
