Quick avocado and egg sandwich

Avocado and egg sandwich.

For an easy fix when hungry, try this sandwich. It’s rich in protein and vitamin B12 (the egg), as well as dietary fiber, vitamin C, K and folate (the avocado).

Ingredients:

  • 1 avocado
  • 1 hard boiled egg
  • 1 tsp mustard
  • 50 gr feta cheese
  • pepper to taste
  • 1/2 tsp lemon juice
  • bread

Cut the avocado lengthwise and scoop the flesh out. In a bowl, mix it with the rest of the ingredients. Using a fork, crumble the feta cheese and the egg. For a different flavor, use different types of mustards and add spices. Spread the mix on a two bread slices. If a meat lover, top it with chunks of cooked chicken or smoked salmon.
