No flour, no eggs, no sugar, no cooking (just blending!). Yet, you’ll still be able to make some delicious muffins. How? It’s actually quite simple! All you need to do is blend all the ingredients below, then scoop and press the dough into a muffin tray, refrigerate for a few hours and voila, you’re enjoying your raw muffin!
- 1/4 – 1/2 cup fresh pineapple, cut into pieces
- 1 cup crumbled walnuts
- 1/2 cup almonds (or two handfuls ). No need to pre-soak them or anything, just toss them in the blender.
- 1/2 cup pitted dates (again, no pre-soaking, just throw them in).
- a pinch of salt
- a pinch of nutmeg
Throw everything into the blender and mix well. If you find that the mixture is too dry, add the juice from one orange or just some water (1/4 cup should be more than enough). You may find that you need to mix a lot, stirring the ingredients using a tablespoon – don’t be discouraged. Once everything is mashed, scoop the contents and press them into a muffin tray. Yields 5 muffins.
Optional: you can also add a bit of vanilla extract, cinnamon or shredded coconut (unsweetened). In the end, after you blended all ingredients, you can add raisins and/ or cacao nibs (found in the healthy foods/ organic sections). The dough should be sweet enough, but if you want you can add a bit of honey too.
