Avocado and Cherry Tomatoes Salad

Ingredients for Avocado and Cherry Tomatoes Salad

If you’re looking for an easy, healthy and veggetarian salad, this avocado and cherry tomatoes one meets all three criteria. If you’re lucky, you can get the avocado for 50 cents at Superstore, making it for a very cheap salad too! The secret (as it always is with salads) is the vinaigrette: always get a good quality balsamic vinegar (I’d recommend the ones from Lina’s Market). And always mix the vinaigrette in advance, stir it well and let it rest for at least 5 – 10 minutes before using it on the salad.

Ingredients:

6-10 cherry tomatoes

1/2 avocado

a handful of green salad mix (baby spinach, italian mix etc.)

1 green onion

1 Tbsp olive oil

1 Tbsp balsamic vinegar

1/2 tsp honey (optional)

1 tsp soy sauce (or a pinch of salt)

pinch of pepper

1 tsp dried or fresh parsley (or thyme)

Instructions:

  1. Mix the vinaigrette sauce in a separate bowl: add the oil, the vinegar, the soy sauce (or salt), the pepper and the parsley and  mix well. Add the green onion, cut into small pieces.
  2. In a salad bowl, put the salad greens, add the tomatoes cut in half, and the avocado cut into small cubes.
  3. Add the vinaigrette and mix well.
  4. Give the salad 10-15 minutes, then eat it with crackers or with that lovely naan bread.

Cheap and easy to make snack

Nothing fancy or very original here. But it’s cheap, tasty and healthy! All you need are some tortillas for the wrap and some veggies for the filling. You’ll need 1 pack of tortillas (try the small ones, 110 calories each from Superstore), 2-3 lettuce leaves, 1/4 red pepper, 1/2 avocado, 1-2 green onions, feta cheese and, if you’re a meat lover, any deli cold cuts.

Instructions:
1. Cut avocado in half, place half (with seed inside)in a plastic bag and refrigerate. Scoop the other half and mix with a bit of feta cheese.
2. Cut green onion. Add to avocado mix. Set aside.
3. Prepare lettuce and red pepper by cutting them into very small pieces.
4. Put one tortilla on a plate and spread some avocado mix. Add some lettuce, pepper and meat. Then wrap and use two toothpicks to hold it in place.

These quantities should be enough for three wraps. Yummy…

Easy avocado snack

I’m a big fan of guacamole, so whenever I get the chance I prepare this quick, almost-guacamole snack. It’s easy, and all you’ll need is 1 avocado, a bit of feta cheese, lemon juice, salt and pepper.

  1. Gently cut avocado in two and scoop the flesh.
  2. With a fork, mash the avocado flesh.
  3. Add a bit of feta cheese. Just a small piece that you crumble with your fingers.
  4. Squeeze a bit of lemon juice, then add salt and pepper. Mix thoroughly.

I always eat it with those President’s Choice crackers you find in Superstore.
