Another apple dessert: Apple omelette November 3, 2009

Apple omelette is so easy to make! It’s good warm or cold, simple or with icecream or jam. You’ll need 4 apples, 4 tbsp white flour, 4 eggs, cinnamon, some butter and around 1 cup of milk. Optional: rum, raisins, vanilla essence.

Instructions:

  1. Peel and cut apples into cubes. Butter an oven proof deep dish and put the apples in.
  2. Sprinkle with cinnamon. Add rum and raisins, if using.
  3. In a separate bowl, mix eggs with flour. Gradually incorporate milk.
  4. Pour over apple cubes and bake at 375F for around 45 minutes or until the mixture has thickened.

Bake some apples for a yummy, healthy sweet treat! First, soak some raisins into rum for 15 minutes. Peel and core apples (I confess that taking the core out was quite a challenge).

In a plate, mix 2-3 tbsp brown sugar with 1 tsp cinnamon, 1/2 tsp nutmeg and cloves (powder). Roll apples through the mixture, then fill them with raisins. Bake in oven at 359F for 1 hour or until tender. Serve warm with plain yogurt and social biscuits.

apple_pastryEasy and delicious dessert with apples and puff pastry. You’ll need: 4-5 apples, 1 puff pastry box (with 2 pastry sheets inside), 1 egg, cinnamon, raisins, walnuts, 1 tsp vanilla sugar.

Instructions:

  1. Peel and grate the apples. You’ll need to really squeeze the juice out of them, otherwise the pastry will get too moist.
  2. Add 1 tsp vanilla sugar, 1-2 tsp cinnamon, walnuts and raisins. If you have some rum or liquor in the house, soak the raisins for 2-3 minutes in it. Mix thoroughly.
  3. Spread one puff pastry sheet on your baking pan, then spread the apple mixture evenly. Cover with the remaining puff pastry.
  4. Beat one egg, and brush it over the pastry.
  5. Put in the oven for some 30 minutes (350F) or until the crust is golden and crunchy.
 

An apple a day… Do you have an apple to spare? October 24, 2008

You know what they say: an apple a day keeps the doctor away. If you have an apple to spare but – like me- you’re kinda bored with just eating them raw, try this quick snack. My mom used to do it for me when I was a kid, and I remembered about it a few days ago:

Peel and coarsly grate the apple. Add 2-3 plain (social) biscuits (just break them over the grated apple), add a bit of cinnamon, raisins and nuts. If you want, just a bit of rum or liquor for extra flavour.

Hm, I think I’ll go make one for myself right now…

 

Celery, Apple and Carrot Salad October 23, 2008

Since apples and celery root are fresh in fall, you can combine them in a very tasty salad. It’s easy to make too, which is always an advantage. This is what you’ll need:

    1 (medium/ small) celery root (cut the skin, rub with a lemon slice)

    1 apple (peeled)

    2-3 carrots (peeled)

    some raisins and nuts

    1 tbs sour cream (or mayo)

    All you have to do is just grate the celery root, the apple and the carrots (tip: if you want full flavor, use the finest grating option). Add raising and nuts, salt and pepper. Use a tablespoon of sour cream (or mayo) as a ’sauce’, and voila, your work is done! Good if kept in the fridge for 2-3 days.
